Killer Kale Cakes
In Chinese Medicine pretty much anything that is green benefits the liver and kale is as green as it gets. The Ancients had the right idea as current studies suggest that the phytonutrients in kale and other Brassicas (cabbage family) may actually help the liver neutralize potentially cancerous substances. Kale is rich in organo-sulfurs which studies show help to fight cancer. Protecting you from cancer, cataracts, emphysema, and rheumatoid arthritis kale is ultimate green.
Kale is also rich in beta-carotene, iron, manganese, calcium and potassium, calcium, lutein, and vitamins A, C, and K.
Some of these vitamins and minerals are super skin supplements like lutein which increases the hydration, elasticity and lipid content of the skin. A powerful antioxidant vitamin C stimulates collagen production and cell regeneration.
At this point you can probably understand why I am so deeply in love with this leafy green.

1 bunch organic kale or chard shredded
6 organic eggs
1 clove garlic minced or pressed
1/2-1 bunch organic green onions thinly sliced
1/2 bunch organic fresh herbs like basil, parsley or cilantro
In a large bowl beat eggs with a pinch of salt.
Toss in the shredded kale, garlic and green onion.
In a fry pan heat butter and olive oil.
Add the egg and kale mixture to the hot pan to form 2-3in cakes.
Cook for a few minutes on each side to golden brown.
Garnish with fresh herbs and shaved Parmesan.
