Got eggs?

If you’re like me you probably have a few eggs leftover in the fridge. As an active member of the “No Mayo” club I have to be creative when it comes to egg salad. Today I tried out something new and it delighted both me (unabashed mayo hater) and my family (who seem to love the stuff). So here’s to a healthier egg salad.

5 hard boiled – preferably Easter eggs

4-6 tbls Dijon mustard

juice of  1/2 lemon

1 large pickle diced

1/4 red onion diced

1 small handful chopped fresh cilantro leaves and stems

Mix and spread on a slice of toasted rye bread.

Just so you know eggs nourish yin, build blood, lubricate dryness and calm the fetus (think egg for an egg). They are wonderfully rich natural beauty boosters. If you are totally over egg salad, but still rich in hard-boiled eggs try adding them sliced to salads for a protein boost.
